Strawberry & Cream Cheese Cobbler
  • 1/2 stick butter
  • 1 egg, lightly beaten
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 1 cup sugar or favorite equivalent substitute
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 qt strawberries, whole, capped and washed and well drained
  • 8 oz cream cheese (regular or non-fat), melted
  1. Preheat oven to 350 degrees. 

  2. Melt butter and pour into a 9x13 inch glass baking dish. 

  3. In a medium bowl, mix together the egg and milk, then stir in flour, sugar, baking powder and salt. Pour directly over the butter in the baking dish, but do not stir.

  4. Puree 1 quart of the berries and pour over the baking dish. Do not stir.Pour the melted cream cheese over the top of all.

  5. Pull a mixing spoon through the layered ingredients to "swirl" together. 

  6. Take the remaining quart of strawberries and halve or quarter any large berries, then add them evenly to the baking dish as evenly as possible. Do not stir.

  7. Place in the preheated oven and bake for 45 minutes or until top is golden brown and edges are bubbling (crust rises up and around the fruit, but fruit will still peek out of top). Best served warm.
