Rude Barb's Strawb-Apple Crisp

This is a great way to combine some of spring's fresh new flavors with a few of the apples you might still have handy in the back of the refrigerator.

  • ¾ C old fashioned rolled oats
  • ¼ C whole wheat flour use WW Pastry Flour if available
  • ¼ C packed brown sugar
  • ½ t cinnamon
  • 3 T butter or olive oil
  • 3 C peeled sliced tart apples
  • 1 ½ C sliced strawberries
  • 1 ½ C sliced rhubarb
  • ½ C packed brown sugar
  • 2 T orange juice
  • 1 ½ T cornstarch
  1. Preheat oven to 375 and coat an 11x8" baking dishwith cooking spray. In a medium bowl, mix topping ingredients until mixture forms coarse crumbs. Set aside. In a large bowl, combine the filling ingredients. Pour in filling and spread evenly. Sprinkle with topping. Bake uncovered for 35 to 40 min., until fruit is tender and topping is golden brown. And, of course this is delicious warm with vanilla ice cream.
