And now for something completely different! Perfect for a hot day--no baking needed! Needs to chill out in the fridge or freezer before serving.
- 2 1/2 C raw nuts or seeds any combination
- 1/2 C pitted dates
- 1/2 C raisins
- 1/4 C agave nectar or honey optional
- Pinch of salt optional
- 3 pints fresh berries any combination
- 1/2 C dried figs
- 1/4 C agave or honey optional
Chop nuts/seeds in food processor using the"S" blade, then add dried fruit. Process until blended to a sticky dough. Add sweetener and salt if desired. Press into pie plate.
Add all but 1 cup of the berries into the crust without mashing. Puree the remaining cup of berries in a blender or food processor with dried figs (and agave/honey if desired). Blend well and pour this mixture over the berries in the crust. Chill in fridge or partially freeze.
This pie is really great with vanilla bean ice cream!
