Here’s a fun, kid-friendly recipe for a Blueberry Crisp Bar Cookie that’s so easy and delicious!  Get everybody in on the kitchen fun.

Filling

  • 4 C Fresh Blueberries
  • 2 T Sugar
  • 1 T flour

Crust

  • 1 C Butter
  • 1 C Brown Sugar
  • 1 C Flour
  • 1/2 t Salt
  • 1 1/2 C Quick Cooking Oats

Preheat oven to 350.

Cream butter and  sugar in med. bowl.  Combine flour, salt and oats in a separate bowl.  Stir into the butter/sugar mixture.  Pat 2/3 of the mixture into an ungreased 8″ square baking pan.  Spread the blueberries evenly across the mixture.  Gently pat the remaining oat mixture on the top to form a solid layer.  Bake in a preheated oven for 40 to 50 minutes.
