A Simmons-family favorite, which you can make a little healthier and NO ONE will notice! The recipe is presented pretty much as offered in the "Simply in Season" cookbook. This is the perfect way to use up "odds and ends" of your assorted less than lovely apples.
- 5 Cups Cored, unpeeled and coarsely chopped apples Seriously, no need to peel them!
- 2/3 Cups Brown Sugar Packed
- 1/2 Cups Olive Oil Your your alternate fav...
- 2 Eggs Lightly Beaten
- 2 Teaspoons Vanilla extract You already know to use the good stuff...
- 1 Cup Whole Wheat Flour Or preferred substitute
- 1 Cup All Purpose Flour Or desired substitute
- 1 Teaspoon Baking Soda
- 1 Teaspoon Salt
- 2 Teaspoons Cinnamon Or Apple Pie spice
- 1 Cup Chopped Walnuts
- 2/3 Cup Brown Sugar
- 1/4 Cup Milk
- 1 Tablespoon All Purpose Flour
- 1/3 Cup Powdered Sugar
Preheat oven to 350 degrees, and lightly grease a bundt pan.
Combine apples and sugar in a big bowl, and let stand while mixing other ingredients.
Combine wet ingredients in a separate bowl.
Combine dry ingredients in a separate bowl.
Stir 1/3 of the dry ingredients into apples, and 1/3 of the wet ingredients, and repeat til all is combined. Pour into the prepared pan.
Bake 50-60 minutes, until a test toothpick comes out clean. Allow cake to cool for 10 minutes, then turn onto desired serving plate.
While the cake bakes, heat all glaze ingredients to boiling, stirring occasionally, then remove from heat.
Mix in powdered sugar, and drizzle over the hot cake, then allow the cake to cool for 30 minutes before serving.
This is a very forgiving recipe, and I love adding things like flax meal or other grains that add even more richness, and I frequently skip the glaze. This is really good warm, and even better the 2nd day.
It's great as muffins, too.
