Sweet Potato, Apple and Braising Greens

A warming, nutritious winter side dish or main meal from traditional winter market ingredients. Toss in chunks of roasted pork or chicken to up the protein.

Servings: 12 Sides
  • 4 medium sweet potatoes peeled and cut into 1/2-inch thick slices
  • 6 tbsp butter melted, divided
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper (more to taste)
  • 3 medium sized Pink Lady or Goldrush apples peeled, cored, and diced
  • 6 cups, packed Braising greens Rinsed, stems removed and torn into 2-inch strips)
  • 1/4 cup Coarsely chopped fresh parsley leaves
  • 1/8 t nutmeg freshly grated
  1. Preheat oven to 425 degrees.
  2. In a baking pan, toss sweet potato slices with 3T melted butter, salt, and pepper. Bake until tender and slightly caramelized, about 20 minutes.

  3.  In large Dutch oven or heavy pot, melt the remaining 3T butter over medium heat. Add apples and saute until slightly tender, about 10 minutes. Remove apples and set aside. 

  4. Add greens to pot, plus 2-3 tablespoons of water and braise until wilted, about 3 to 5 minutes. 

  5. Reduce heat to low and add apples and sweet potatoes. Add nutmeg, continue cooking, stirring occasionally, until warmed through, 3 to 4 minutes. Stir in parsley, and season with additional salt and pepper to taste. Serve hot.

Recipe Notes

Make this a main dish by adding chunks of  roasted chicken or pork, and make it vegan by swapping the butter for coconut oil.
