1 cup brown sugar
2 cups whole milk
¼ tsp salt
2 teaspoons vanilla extract or ½ vanilla bean, scraped
5-6 cups stale bread cubes, ½-1 inch
3 cups chopped strawberries
Whisk together the eggs, brown sugar, milk, salt and vanilla. Add bread pieces and strawberries.
Let mixture soak at least 2 hours at room temperature or up to overnight in the refrigerator, stirring occasionally.
After it has soaked, place mixture in a sprayed 2 quart casserole dish or a pie plate would also work well here.
Bake at 350 for 45-60 minutes until the pudding is browned and the center is set. Baking time will depend on the temperature of the mixture when it goes into the oven and the depth of the mixture in the baking dish.
Allow to cool slightly before enjoying with whipped cream or ice cream!
Substitution note: This recipe would work fine with any other berries, peaches or even rhubarb
