• 4 quarts strawberries, hulled and halved
  • 4 T candied ginger, chopped
  • 2 T lemon juice

Place fruit in a large pot and lightly mash.  Add ginger and lemon juice.  Bring to a boil over a medium heat, stirring frequently.  Add honey and sugar.  Stir to dissolve.  Stirring constantly, add pectin, stirring constantly.  Simmer 45 minutes to an hour until the mixture thickens. Pour into clean, prepared jars, wipe rims and add lids.  Process in a boiling water bath for 10 minutes. Makes 7 8oz. jars.

Ingredients
