Strawberry Cobbler with Cornmeal Topping

Ingredients
Filling
  • 1/2 C turbinado sugar
  • 2 Tbsp flour
  • 1/8 tsp allspice
  • 2 quarts strawberries rinsed, hulled and sliced
  • 2 tsp fresh lime juice
Topping
  • 1 C flour
  • 1/3 C turbinado sugar
  • 1/4 C cornmeal
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 3 T butter
  • 1/2 C milk
  • 1/2 tsp salt
Instructions
  1. Preheat oven to 400 degrees; lightly grease a 13x9" casserole dish.

  2. For the filling, mix sugar, flour and allspice in large bowl. Add sliced berries and mix well. Add lime juice. Transfer to the prepared dish. 

  3. Mix topping ingredients, cutting in the butter thoroughly. Spoon topping over berry mixture.

  4. Bake until topping is golden brown and filling is bubbly, 25 - 30 minutes.
