Quinoa and Blueberry Salad

  • 1 1/2 C dry red quinoa
  • 1 pint fresh blueberries or other fresh berry
  • 1-2 green scallions chopped
  • 2 large handfuls fresh tender spinach coarsely chopped
  • 1/2 C olive oil
  • large lemon juiced
  • salt and pepper to taste
  1. Cook quinoa in water or stock until tender, according to package directions; drain well, then rinse with cool water.

  2. Add scallions, spinach and olive oil, tossing together till mixed. Stir in berries, and season to taste with lemon juice, salt and pepper.

  3. Serve at room temperature or chill before serving.
