• 1 large clove garlic, minced
  • 1/2 t. seasalt
  • 1 medium tomato, diced
  • 1 large shallot, finely chopped
  • 1 peach, diced
  • 1/2 C green pepper, diced
  • 1 jalapeno pepper, minced (more to taste)
  • 2 t. lime juice
  • fresh chopped cilantro, to taste
  • honey, to taste

In medium sized mixing bowl, use a fork to mix together garlic and sea salt. Add all other ingredients except honey. Whatever kind of hot pepper. Refrigerate and allow flavors to meld for at least 30 minutes, then add cilantro, honey and more hot peppers to taste. Best eaten the same day. Serve with chips or over fish or chicken.
