• 4 large ripe peaches
  • 2 C cold water
  • 1/4 C honey
  • 1 t. vanilla extract
  • vanilla ice cream

Wash peaches. In large pot, combine water, honey, and vanilla. Place whole peaches in the liquid on the stove and heat over medium-high until liquid is boiling. Reduce heat to medium-low and simmer peaches for about 15 minutes, turning them every three minutes. Remove peaches and refrigerate until cold. Continue to simmer the remaining poaching liquid another 15 or so minutes to reduce. Pour into a jar and refrigerate until ready to use.

To serve, peel skin from the now-cold peaches–it should slip off easily–and cut them in half, removing the pits. Put two peach halves on each dessert plate or bowl. Scoop ice cream on top, then drizzle the reserved syrup on top. Serves 4. These poached pears are also perfect for a drizzle of chocolate sauce or a raspberry sauce, when it transforms into the classic “Peach Melba.”
