- 1 pint frozen berries, thawed (or fresh)
- 1/4 C honey or raw sugar
- 1/2 t. vanilla extract
- 1 large bunch fresh mint
- 1 C bourbon
- Seltzer, club soda, or Pellegrino
Place berries in a sieve over a bowl. Press against mesh of sieve to drain juice into the bowl. Set solids aside (save them for later to stir in with yogurt or cottage cheese and a drizzle of honey). Add honey or sugar to the berry juice and stir well to make syrup. Pour 1/4 cup of bourbon into each of 4 glasses. Add muddled mint. Divide berry syrup between the glasses, add ice, and then top with seltzer. Stir a little and serve.
