Frosted Cider Cupcakes

Sweet and appl-icious and tasting of fall.

Servings: 12 cupcakes
Ingredients
Icing:
  • 3 tbsp apple cider
  • 8 oz Neufchatel cheese
  • 1/3 cup powdered sugar
Batter:
  • 1 1/3 cup flour
  • 1 tsp cinnamon
  • 1 pinch freshly grated nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup cider
  • 1/2 cup coconut oil
  • 3/4 cup brown sugar
  • 2 small eggs
Instructions
  1. Preheat oven to 375, and place 12 cupcake liners in a cupcake baking tray. 

  2. In a food processor, combine Neufchatel, powdered sugar, and cider. Pulse till thoroughly blended, then set in refrigerator to chill. 

  3. In a large mixing bowl, combine flour, spices, and baking soda. 

  4. In a smaller bowl, whisk together cider, oil, sugar, and eggs until thoroughly blended.

  5. Add liquid to the flour mix and combine thoroughly--the batter will be a little runny. 

  6. Pour the batter into the prepared cupcake pan and bake for 20 minutes or until a toothpick comes out clean. Cool completely, then frost. Store in refrigerator.
