Apples continue to ripen and soften after harvest, but refrigeration and good airflow will help slow this process and keep them crisp as long as possible.
For the best results, we recommend that you dedicate a bin in your refrigerator and that you open any vents so as much air circulates as possible. Can’t refrigerate them? Then find the coolest spot available that won’t drop below freezing. A box or cooler in an unheated garage or porch can do in a pinch.
Some varieties, especially later season apples, store better than others. Some of our favorite “keeper” apples are GoldRush, Pink Lady and Fuji apples, which you’ll find on our market tables as far into the winter (or early spring) as their quality continues.
