A classic pairing of sweet and savory fall flavors.
- 1 crust prepared pie pastry
- 6 cups apples peeled and coarsely chopped (about 4-5 large apples)
- 1/2 cups brown sugar
- 2 tsp cornstarch
- 1 tsp cinnamon
- 1 cup shredded sharp cheddar cheese
- 1/2 cup brown sugar
- 3/4 cup flour
- 1/2 tsp cinnamon
- 2 tbsp butter cut into pieces
Preheat oven to 375. In a large bowl, combine apples and brown sugar, cornstarch, and 1 teaspoon cinnamon. Mix well and pour into pie pastry. Place pie plate on a cookie sheet to prevent dripping and bake for 30 minutes.
Use a food processor to combine all the topping ingredients till thoroughly mixed. This mixture will be crumbly. Smooth the crumbs over the apple mixture from the center out toward the edge of the pie. Bake an additional 15 - 20 minutes or until topping is golden brown.
